Our Story

Built by Family. Guided by Faith. Baked for Community.

Established in November 2024, Portland Bakery began with a simple vision — to create the kind of bakery we would want in our own community: welcoming, honest, and built to last.

As a family venture, we opened our doors with a love for traditional baking and a desire to create something meaningful for Portland’s future. Our Christian faith quietly shapes the way we work — encouraging us to serve with generosity, act with integrity, and make every person who walks through our doors feel welcome.

Each day starts early to fill our shelves with handcrafted pies, slow-fermented sourdough, specialty breads, cakes, pastries, and bakery favourites made with care and attention to quality. We believe good food brings people together and that hospitality matters just as much as what comes out of the oven.

Located in Portland on the western edge of the Blue Mountains, we’re proud to be building something of our own — not preserving a bakery legacy, but creating one.

Whether you’re collecting your regular loaf or stopping in on your travels, our hope is that you leave with something worth sharing and a reason to come back.

The 1:00 AM Ritual

BEFORE PORTLAND WAKES

There’s nothing glamorous about early starts — just consistency, care, and doing things properly.

By the time the doors open, the work is already well underway — all so there’s something fresh waiting for the community each morning.

Every day begins long before sunrise. While Portland sleeps, dough is mixed, pies are prepared, ovens are warming, and the bakery slowly fills with the rhythm of another day’s production.
